The package celebrates the hotel’s union of culinary artistry, cultural immersion, and luxurious accommodations. Guests can indulge in special moments that reflect The EVE’s distinct personality, with a bespoke EVE gift to take home as a keepsake of their first stay at this extraordinary destination.

A Design-Led Hotel Experience
The EVE Hotel is a stylish nexus of art, culture, and culinary experiences, designed to reflect the dynamic energy of its neighbourhoods and Sydney’s global status. The hotel’s design is the brainchild of SJB’s Adam Haddow, 360 Degrees’ Daniel Baffsky, and Interior Architect George Levissianis—a trio of forward-thinking creatives renowned for their ability to craft spaces that are as functional as they are beautiful.
From the moment guests step into the art-filled lobby bar, they’re enveloped in a world of creativity. The vaulted ceilings, curated interiors, and immersive art installations – including several pieces from prominent Surry Hills artist and gallery owner, Louise Olsen - offer a striking introduction to The EVE’s design ethos. Moving through the hotel, guests will find a rooftop garden and restaurant with panoramic views over Surry Hills and Redfern—a lush urban haven inspired by the site’s historical roots as one of Sydney’s first pleasure gardens.
The rooftop space, envisioned by Daniel Baffsky of 360 Degrees, combines native and exotic plants in bold, layered arrangements that blur the lines between architecture and nature. The 20-metre rooftop pool, finished with textural natural stone, bespoke cabanas, and imported Sukabumi tiles, provides an oasis above the city streets. Baffsky’s landscaping extends seamlessly into Wunderlich Lane, creating a cohesive connection between the hotel and the precinct’s curated retail and dining offerings.

At the core of The EVE’s hospitality offering is Bar Julius, a European-style neighbourhood bar created by Liquid & Larder, the renowned team behind Sydney’s most celebrated dining venues. With an all-day dining concept, Bar Julius seamlessly transitions from morning espressos to evening cocktails, offering a menu that celebrates fresh, bold flavours with a creative twist.
The Crystal Mimosa served tableside with flair, and the Bar Julius Negroni, crafted in collaboration with local distiller Archie Rose, highlight the venue’s playful approach to drinks. The inviting space, with rich burgundy tones, tactile marble, and bespoke leather seating, captures the charm of a European bistro while staying firmly rooted in Sydney’s dynamic culture.
