Latin America's Best Female Chef 2022 Manu Buffara to host Vivid Residence at Kiln Restaurant

Vivid Sydney has announced it will host this year’s Vivid Residence, one of Vivid Food’s most hotly anticipated dining experiences, within hatted Kiln restaurant at Ace Hotel Sydney. The unmissable dining event will see Latin America’s best female chef, Manoella ‘Manu’ Buffara, takeover the restaurant from 4 - 6 June. Guests will enjoy a curated, never to be repeated menu exclusive to Vivid Residence, which includes a collaborative dish between Buffara and Kiln’s chef partner Mitch Orr.
Manoella ‘Manu’ Buffara of Brazil’s award-winning Manu Restaurant, will bring her pioneering approach to sustainable fine dining to Australia for the first time, taking over Kiln – the rooftop restaurant at Ace Hotel Sydney, for three nights only. The event follows a highly successful Vivid Chef Series event held at Kiln as part of Vivid Food 2023. Located 18 stories above Surry Hills, diners will enjoy glimpses of Sydney Opera House and views across the Sydney skyline.
During this year’s Vivid Residence, chef Buffara will work with her team and Kiln’s esteemed chefs to create a cutting edge and contemporary menu, which features a dish by Kiln’s chef partner Mitch Orr, as a Brazilian rendition of his famous Jatz snack (one of Sydney’s most Instagrammed dishes). The unique culinary experience will celebrate the synergy between the renowned restaurants, blending Buffara’s award-winning sustainable culinary practices with Kiln’s creative, unpretentious approach to fine dining that showcases the best in locally and responsibly sourced produce. With Buffara’s Manu restaurant having received the The Flor de Caña Sustainable Restaurant Award 2023, placing Curitiba on the global culinary map, and Kiln’s commitment to breaking the boundaries of traditional fine dining; the event promises to deliver an unmissable dining experience where culinary artistry meets social responsibility.
Chef Manoella Buffara says: “This menu blends memories and flavours from my childhood with modern cooking techniques learned over years of experimentation as a culmination of my culinary journey. We’re delighted to be working with Kiln, who share a passion for pushing culinary boundaries, to showcase the beautiful array of locally and responsibly sourced ingredients available in NSW, as a way of presenting fine dining through a sustainable lens. Taking place across three days from 4 - 6 June, Buffara and the team will create two menus, incorporating fire throughout as an ode to Kiln’s ethos. Diners can choose from a five-course tasting menu for $195, or a seven-course tasting menu for $245; with a wine pairing option for an additional $80 for five-course and $130 for seven-course. Menu highlights include: Jatz with salt cod and green ants; scallop with artichoke and wild mushroom consommé; sweet potato with mud crab salad and pasta; and tucupi with coconut cake, coconut bacon and milk flower ice cream.
