The Natural World | The Human Experience   

An expansive circular structure welcomes you to bear witness to the ritualistic mating dance of the Brolga, the only crane species native to Australia. Projected onto a transparent surface, the huge bird apparitions appear to float in the air. Lose yourself in the movement of these hypnotic, larger-than-life cranes, as you reflect on our deep connection to nature and the creatures within it.

Each night of the series, one of Australia’s best chefs will work with OzHarvest to plate up their unique take on a vegetarian three course menu with snacks, using rescued, NSW ingredients and weaving the theme of humanity into every dish.
