Road trips have never been more popular. As well as exploring new destinations on New South Wales drives, there’s joy to be found in returning to familiar routes. Here are some exceptional new places to stay as you take your time travelling around the state.  

To the north 

The Eltham Hotel, Eltham  

In the Byron Bay hinterland on the NSW Mid North Coast, the Eltham Hotel in the town of Eltham has been reborn as a boutique getaway with five very individual rooms. Each one is dedicated to a grand dame from the region and includes The Delilah, named after a film star who retreated to the hinterland, and The Estelle, which remembers a botanist who sketched flora around the world. Learn about local characters as you spend a night in their style.  

The Star, Wauchope  

After a two-year renovation, The Star has transformed 22 old motel rooms into seven boutique apartments with Art Deco touches in the middle of Wauchope on the Mid North Coast, 20 minutes west of Port Macquarie. Each apartment has a separate bedroom and living space and some come with cosy outdoor balconies. 

Mansfield Estate, Grants Beach  

If you’re planning a Pacific Coast drive, factor in a night at the off-grid Mansfield Estate eco-retreat, where you can sleep in upcycled shipping containers and relax by the pool, play basketball in the sports hall and roast marshmallows around the fire pit. Set on 242 hectares just 25 minutes south of Port Macquarie, the property is part of a koala corridor, so keep your eyes peeled for furry icons snoozing in the trees. 

To the south 

Black Barn Bowral, Southern Highlands 

Australian fashion designer Collette Dinnigan has become one of the country’s top interior designers, having created the Collette Dinnigan Penthouses at Bannisters by the Sea in Mollymook on the NSW South Coast. Her latest venture has transformed an old barn in the Southern Highlands into a stylish farmhouse. At Black Barn Bowral in Bowral, a 90-minute drive south of Sydney, you can admire Dinnigan’s rustic and modern touches, including doors collected in Egypt and Argentina. Walk on floorboards made from recycled Danish cheeseboards and feel old French marble bathroom floors being warmed by solar heating before slipping between the Egyptian cotton sheets in your king-size bed.

To the west 

Callubri Station, Buddabadah  

This new Central West NSW road-trip star offers a memorable outback farm-stay luxury experience. Wake up to uninterrupted views of the surrounding plains in one of Callubri Station’s four Sky Suites, and then take a dip in the 12-metre mineral pool complete with swim jet. Join a farm tour and spot kangaroos with your sundowners, and then head back for a three-course dinner under brass chandeliers in a former Officer’s Mess from World War II.  

Wilga Station, Bathurst 

On a 105-hectare working sheep farm, just outside of Bathurst in the NSW Central Tablelands, you’ll find a secluded hut on a low-rising grassy hill. Part of Wilga Station, the off-grid, one-of-a-kind Farmers Hut has a roof covered in grass, a wood fireplace, designer bathroom, a kitchenette for whipping up a gourmet breakfast with local ingredients, and a king-size bed. In winter 2021, the station will also welcome guests to its luxe Shearers Hall with room for 10 people. 

Perricoota Station, Moama  

The perfect stop on a Murray River road trip, historic sheep and cattle property Perricoota Station, 25 minutes’ northwest of the Riverina town of Moama, now offers two ways to stay. The Quarters is a quiet riverside retreat with eight rooms, while Watson’s is a five-bedroom Art Deco home. Book by the room or by the building, and when you want to get out on the water, you can opt to hire a private pontoon.  

Flash Jacks, Gundagai  

When you’ve finished travelling along the road to Gundagai in the beautiful Riverina region, treat yourself to a night of luxury at Flash Jacks. This nine-room boutique hotel in an 1888 Catholic convent in Gundagai town has been created by the team that brought us the cute huts and cottages of nearby Kimo Estate, and includes light and bright premium king-size rooms with corner windows and an apartment-sized family room that sleeps four.
