The world’s most-Instagrammed cake, internationally famous scrambled eggs, wood-fired dishes by a Netflix star, architecturally striking pavlova and cult burgers: they’re all compelling reasons for experiencing Sydney’s dining scene. Although the dizzying amount of choices may seem overwhelming, first-time visitors should take note of this following list — it covers all the essential dining spots (and dishes).  

Scrambled eggs at Bills 

Self-taught cook Bill Granger opened the first Bills cafe in Darlinghurst in 1993. Its communal table and brunch staples (avocado on toast, sweet corn fritters and ricotta hotcakes) became so influential that it set the standard for cafés everywhere and led to a global Bill’s empire. Don’t overlook his light, creamy and buttery scrambled eggs: UK newspaper The Times declared them to be the best in the world. Try them at the original location or at the Surry Hills or Bondi Beach outposts of Bills.  

Gelato Messina 

Macadamia crunch, coconut and lychee, tiramisu, and panna cotta with fig jam and amaretti biscuit. They’re some of the signature flavours that get scooped into cones at Gelato Messina, which now has more than a dozen stores across New South Wales. Don’t miss the weekly specials (like the pavlova with passionfruit puree and baked meringue), which are made with quality ingredients (such as single-origin cacao from Ecuador and Jersey milk supplied from Gelato Messina’s own dairy farm).  

Bennelong’s modern Australian menu 

Bennelong is located within the country’s most famous building — the Sydney Opera House — and its menu aspires to be as Australian and iconic. Its pavlova features architectural sails inspired by this landmark, while its lamington is served with a dramatic blast of liquid nitrogen.  

Steak at Firedoor 

Everything is cooked over fire at Firedoor in Surry Hills, on the fringe of the city centre, even the boiled water and dessert. Chef Lennox Hastie was recently the local star of Netflix’s Chef’s Table: BBQ series, which chronicled how he creates culinary magic with char, smoke and burning wood. The restaurant’s dry-aged steak, which is aged for around 200 days, is served with a sprinkle of salt and is a carnivore’s delight.

Vegie burger at Mary’s 

Since its in launch 2013, Mary’s has become one of the most popular burger joints in the city. The original Newtown location is graffiti-covered and gets regularly blasted with loud music, but leaves a gentle carbon footprint with its garlicky mushroom burger. For more plant-based options, head to the Mary’s On Top location in Chippendale or the Circular Quay outpost, where the entire menu is available in vegan form (and the fried cauliflower is a very fine substitute for the chicken).  

Pavlova at Bar M 

Bar M in Rushcutters Bay offers an inspired take on traditional Italian cuisine — think tiramisu martinis and affogato served with Patrón XO Café liqueur. While pavlova might not be European in origin, Bar M’s version is always worth checking out. One memorable incarnation was a “floating” version presented on a bed of fairy floss and served with Chantilly cream and seasonal fruit.

Fish and chips at Sydney Fish Market 

Sydney Fish Market is the largest of its kind in the Southern Hemisphere. When visiting this harbourside market at Blackwattle Bay in inner-city Pyrmont, don’t miss the fish and chips from Peter’s. The unparalleled fresh fillet is encased in a beautifully browned batter and served with crisp chips. The wharf view tops off this dining experience.  

Strawberry watermelon cake at Black Star Pastry 

Chef Christopher Thé originally created his strawberry watermelon cake for a friend’s wedding. Fast-forward a decade later and the signature dessert at Black Star Pastry has since become “the world’s most Instagrammed cake”, according to The New York Times. Try the much-photographed layers of almond dacquoise, rose-scented cream and watermelon at the original outlet in Newtown in the Inner West.  

Bourke Street Bakery’s meat pie 

The humble meat pie is an Australian staple and Bourke Street Bakery might serve one of the most beloved versions. Even American comedian Amy Schumer is a fan. The bakery has 12 stores across the city (including the original Surry Hills location on the corner of Bourke and Devonshire streets). Choose from the classic beef version, the beef brisket pie with mushroom, the beef and bacon offering with cheesy mash or chicken and sweet potato flavour.  

Sustainable seafood at Saint Peter 

Award-winning chef Josh Niland may have recently reconfigured the design of his restaurant Saint Peter, in the inner-city suburb of Paddington, but his fin-to-tail approach to sustainable seafood remains. He makes pâté from John Dory liver, terrine from coral trout head and even transforms Murray cod fat into caramel for his chocolate slice dessert.  

Roast duck at Mr. Wong 

Slick Cantonese-style restaurant Mr. Wong in the city centre pays homage to classic Chinese dishes in a contemporary style: think prawn toast with foie gras to “typhoon-shelter style” crab fried rice. Arguably the most famous dish here is the roast duck, which arrives crisp-skinned with a perfect fat-to-meat ratio. The duck is presented with pillowy soft pancakes, freshly sliced cucumber and hoisin sauce.
