For three-time Olympic gold medallist Jessica Fox, Western Sydney is both her training base and her long-time home. A Penrith local since the age of three, the 10-time world champion slalom canoeist shares her pick of experiences that will give you a different perspective on Sydney. Naturally, a kayaking expedition around Sydney Harbour is a must, according to Jess, but she also suggests you head west to see the wonders of the Blue Mountains and enjoy a drink at her favourite hometown rooftop bar.

Paddle under the Sydney Harbour Bridge

Swapping out the turbulent whitewater she usually trains in for the calmer waters of Sydney Harbour, Jess loves Sydney Kayak Experience’s two-hour Sunrise Kayak guided tour. “You get a beautiful part of the city with the views of the harbour,” she says, “and you’re active on the water.”

After settling into a kayak lit up with glowing LED strips, you’ll paddle from the shores of harbourside Milson Park in Kirribilli past a flotilla of moored sailboats and out onto the open harbour. You’ll see the white sails of the Sydney Opera House catching the first rays of the day as you make your way under the famous steel arches of Sydney Harbour Bridge to explore the northern foreshore. “Sydney Harbour at sunrise? Stunning,” says Jess. 

Your memorable voyage ends back at Milson Park: the Sydney Kayak Experience tour includes a $20 credit for a well-earned breakfast at Flying Bear Cafe at the Sydney Flying Squadron Sailing Club, mere steps away from your launchpad.

Embrace epic mountain views

Having grown up at the foot of the UNESCO World Heritage-listed Blue Mountains National Park (she was a star student at a high school in the Blue Mountains suburb of Blaxland, a short drive from Penrith), Jess loves this magical wilderness area.

Alongside hiking the dramatic landscapes and exploring the charming villages scattered across the mountains, Jess suggests seeking out a unique experience in Katoomba, a 90-minute drive or a two-hour train ride from the centre of Sydney.

Not content with enjoying the views of the iconic Three Sisters and the rugged Jamison Valley from the comfort of Scenic World Blue Mountains’ Scenic Skyway, the largest aerial cable car in the southern hemisphere, Jess’s tip is to book the Beyond Skyway experience. As part of this experience, you’ll get to spend up to 20 minutes on the roof of the Scenic Skyway cabin as it glides 270 metres above the eucalypt forest blanketing the valley floor. “You get a vantage point that is so unique,” says Jess, “and epic views!”

Relax poolside after a day in the water

The most decorated canoe slalom athlete in Olympic history, Jess honed her skills through countless hours of training at Penrith Whitewater Stadium. This world-class facility was built for the 2000 Sydney Olympic Games and continues to host major events, including the 2025 ICF Slalom World Championships from 29 September. 

Get a feel for some of the physical and mental challenges Jess has overcome on her way to Olympic glory with a whitewater rafting adventure or a tailored kayak lesson at Penrith Whitewater Stadium. Then toast your efforts with a cocktail, spritz or snack at Theo’s Rooftop Bar at the Astina Suites Penrith, around a 15-minute drive from the stadium. This Mediterranean-inspired rooftop space, with its infinity pool and sweeping views of the Blue Mountains, is Jess’s tip to “chill out and hang out to finish out the day”.

Enjoy one perfect day in Sydney

“I’d recommend these three experiences to someone visiting Sydney because you get a real cross-section of our area,” says Jess of her choices. “What I love most about Sydney is our landscape: we’ve got a beautiful coastline, we’ve got an incredible city and I love the Blue Mountains as well.”

And if you only had a day to get a feel for the harbour city? “I would recommend strapping on some running shoes and going down to Circular Quay and doing a lap of the city. Then get on a ferry to Manly, head to Manly Beach and get that view [of the Pacific Ocean]. And if you have time, squeeze in a trip to the Blue Mountains on the train.”

Jess adds that if you carve out some time to explore beyond Sydney and the Blue Mountains, you can expect a warm welcome across regional NSW. “My favourite thing about New South Wales is its people,” she says. “I love how warm, how friendly and how helpful we can be.”
