It’s never too early to start planning your summer escape. Whether your ideal holiday involves coastal walks, wildlife encounters, vineyard lunches, alpine adventures or family-friendly road trips, New South Wales offers plenty of ways to make the most of the warmer months. So here are seven destinations to add to your summer holiday hit list now.

1. Kiama:

Fresh from taking home Silver in the Australian Top Tourism Town Awards, Kiama continues to prove that some summer favourites never go out of style.

Kick off your visit at the iconic Kiama Blowhole before stretching your legs along the spectacular Kiama Coast Walk, where clifftop views and ocean panoramas come standard. Keen to get in the water? Sign up for a local surfing lesson with Illawarra Surf School or venture just outside town to Saddleback Mountain Lookout, where sweeping views extend from Cronulla in the north to Milton in the south.

For a different perspective, head to Illawarra Fly Treetop Adventures, where elevated rainforest walkways and Australia’s highest zipline offer plenty of thrills above the canopy.

When it’s time to refuel, settle in at The Quarry Café for a leisurely brunch, sample cool-climate wines at Crooked River Estate, or pick up artisan pastries and breads from local favourite Slow Dough.

For those planning to stay a little longer, Buena Vista Farm provides a peaceful rural retreat just minutes from the coast.

2. Merimbula:

Summer shines magnificently on the Sapphire Coast, where Merimbula serves up pristine beaches, wildlife encounters and some of Australia’s best oysters.

Begin with breakie The Eddy Merimbula, then a stroll along the Merimbula Boardwalk, which winds through wetlands and waterways before leading into town. Nature lovers can explore the rainforest-lined Goodenia Walking Track or venture into Beowa National Park, where the Pinnacles Walk reveals striking rock formations backed by turquoise ocean views.

On the water, join Navigate Expeditions for a kayaking adventure or hop aboard a wildlife cruise with Sapphire Coastal Adventures. Seafood lovers should make time for an oyster experience with Captain Sponge’s Magical Oyster Tours or a visit to Broadwater Oysters to learn more about the region’s prized produce.

Come dinnertime, grab a waterside table at Mitchies Jetty, enjoy fresh local flavours at Tidal Restaurant & Bar, or settle in for cocktails and small plates at Dulcie’s Cottage.

Stay close to the action at Hillcrest Merimbula, perfectly positioned for beach days and coastal exploration.

3. Central Coast

Just north of Sydney, the Central Coast is built for long summer days spent outdoors.

Families can cool off at the Central Coast Aqua Park in Gosford or paddle around Avoca Lake with equipment hire from Aquafun. Adrenaline seekers can elevate the experience even further at Jetpack Adventures in nearby Mt Penang Gardens.

The region’s beaches offer something for everyone. Families flock to Avoca, Copacabana, Ettalong and Toowoon Bay, while surfers gravitate towards Terrigal, Soldiers Beach and Pelican Beach. Visitors looking to hone their skills can join a lesson with Central Coast Surf Academy.

For a slower pace, Glenworth Valley Wilderness Adventures offers guided kayaking experiences through some of the region’s most scenic waterways.

After a day in the sun, book a table at The Cowrie in Terrigal for stunning ocean views, grab a drink at Dionysia, enjoy a long lunch at Amalfi in Ettalong Beach, or unwind at Avoca Beach House.

Stay central at voco Gosford, a convenient base for exploring the region’s beaches, waterways and dining scene.

4. The Tweed:

Already beloved by locals, The Tweed recently earned a place on the Lonely Planet Global Travel Hot List 2027, further cementing its status as one of Australia’s most exciting destinations.

Discover the region at your own pace along the Northern Rivers Rail Trail, which winds through lush countryside and charming villages. Round out the day with dinner at Bistro Livi, a long lunch at Tweed River House, or a refined dining experience at Paper Daisy.

5. Mudgee:

Summer and wine country are a natural pairing, and few destinations do it better than Mudgee.

Spend your days hopping between cellar doors such as Stein Winery, Lowe Family Wine Co. and Logan Wines, or take in the rolling countryside from above on a sunrise hot-air balloon flight. Those wanting to explore at a slower pace can cycle between wineries and local attractions.

When hunger strikes, settle in at The Barn at Blue Wren Farm, enjoy coffee and cake at beloved local institution Alby and Esther's, or dine on modern Australian fare at Pipeclay Pumphouse overlooking the vineyards.

Turn a day trip into a weekend escape with a stay at Sierra Escape, where luxury tents and outdoor bathtubs invite guests to switch off under the stars. Alternatively, check into the stylish The Clairfield Hotel or retreat to the expansive surrounds of Akuna Estate.

Adventurous travellers can tackle the trails of Thredbo Mountain Bike Park or cycle through the region’s breathtaking alpine scenery on the Thredbo Valley Track.

After a day outdoors, discover the region’s thriving food and drink scene. In Jindabyne, Cocina brings vibrant Mexican flavours to the alpine dining scene and has quickly become a favourite among locals and visitors alike.

Extend your stay with a few nights immersed in nature. Crafters Cabins pairs contemporary design with mountain views and outdoor baths, while Mill Cabin offers a secluded off-grid retreat overlooking the Thredbo Valley. For a touch of rustic luxury, Tinkersfield combines character-filled accommodation with gourmet touches among snow gums and wildflower meadows.
